Texas Breakfast Casserole for South Beach

Ingredients List
- ~12 eggs
- ~6 egg whites
- ~few handfuls of shredded cheese of your choice (I had a pizza mix and some cheddar)
- ~1 can Rotel or other diced tomatoes w/ green chiles (drained)
- ~1/3 c Jimmy Dean pre-cooked turkey sausage crumbles
- ~2-3 green onions, chopped
- ~Tony Chacere's to taste
Directions
Preheat oven to 375. Generously grease a 13 x 9 glass baking dish or metal pan with cooking spray. Sprinkle cheese on bottom of dish, enough to cover the bottom pretty good. Sprinkle green onions and sausage on top of cheese.
In a large bowl, mix eggs, egg whites, Tony's, and tomatoes. (I don't like chunky tomatoes. Love the flavor, it's just a texture thing. I used my emulsion blender to blend the drained tomatoes into a thick salsa, then added to egg mixture) Pour egg mixture over sausage, onion, and cheese. Use a fork to stir slightly just to mix the goodies from the bottom of the pan.
Bake at 375 for 30 min or until knife comes out clean.
Hope you enjoy this yummy breakfast! Paul and I will eat on this all week. I placed individual servings in ZipLoc bags for him to take to work and heat up. Will last a week in fridge.
