Texas-Style Spanish Rice

 Ingredients List

  • 1/4 C Chopped green pepper 2 T Cooking oil 1 C Uncooked long grain rice 1/2
  • C Tomatoes with green chilies 1/4 t Ground turmeric 1 t Ground cumin 1/2 t
  • Salt 1/4 t Garlic powder 2 C Water 2-3 T Chopped fresh cilantro,optional
  • In a skillet, saute onion and green pepper in oil for about 2 minutes. Add
  • rice and stir until coated with oil. Add tomatoes, turmeric, cumin, salt,
  • garlic powder and water; bring to a boil. Reduce heat and simmer, covered,
  • about 20 minutes or until liquid is absorbed. Add cilantro if desired.
  • Yield: 6 servings.

Title: Texas/ontario Picante Sauce

16 c Ontario Fresh Tomatoes
2 1/2 c White vinegar
1 c Sugar
2/3 c Salt
1 ts Alum
2 ts Cumin
1 c Onions
3 tb Garlic
2 tb Chili Powder
1 ts Black Pepper
1 c Jalepeno pepers

Put all ingredients in food processor and chop ( note less chopped- thicker
, more chopped-thinner ); Pour into a large pot and bring to a boil. Let
cool enough to pour into pint jars, then place jars in canning bracket and
immerse in water to about 1 inch below cap. Boil jars for 20 minutes. Let
cool, Serve as condiment for all sorts of dishes, perfect with Mexican
food.
