Thai Chicken with Cashew Nuts

 Ingredients List

  • 12 oz. chicken breast
  • 2 oz. fried cashews
  • 1/2 oz. garlic
  • 4 oz. shallot
  • 4 head green onions
  • 2 large red chili peppers
  • 3 T. vegetable oil
  • 1 T. rice wine
  • 2 T. oyster sauce
  • 1 T. soy sauce
  • 1 T. fish sauce
  • 1 oz. coconut sugar


Thinly slice the chicken. Crush the garlic. Slice the shallots, spring onions and chili peppers.
Heat the oil in a pan and fry the garlic until it turns golden brown. Add the Chicken breast and small onions, and sauté until the chicken is barely cooked, that is, its surface turns opaque (about 3 minutes). Add 5 oz. water, the oyster sauce, soy sauce, fish sauce and palm sugar, and stir to mix all ingredients.
Add the cashew nuts, spring onions and chili peppers. Saute quickly for 30 seconds. Add the rice wine before turning off the heat.
