The BEST oatmeal chocolate chip cookie recipe. EVER.

 Ingredients List

  • 2 1/4 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 cup oats
  • 2 cups chocolate chips {I always cheat and add more!}
  • 1 cup chopped pecans

 Directions

1. In a medium sized mixing-bowl, combine flour, salt, & baking soda. Set aside.

2. Using your Kitchenaid mixer, blend softened butter until creamed.

3. Add granulated sugar and brown sugar to the butter and mix thoroughly.

4. Add vanilla and 1 egg, mix again. You may need to use a spatula to scrape the side of your bowl at this point.

5. Add your 2nd egg and mix.

6. Slowly add your flour mixture {from step #1}, to the egg dough. I recommend pouring about 1/3 of the flour into the mixer at a time and blend thoroughly. Scrape your bowl with a spatula, then continue pouring the next 1/3 of the flour mixture into the mixer. Repeat until all flour is blended thoroughly into the dough.

7. Add your oats {this is the healthy part} and lots of chocolate chips to the cookie dough and mix well.
{Yummmm! It's getting good.}

8. Finally, add chopped pecans to the dough and mix one last time! The dough will be pretty thick and this is perfect! This is a great time for all of you cookie dough eaters to dig in :)

9. Drop cookie dough balls by the rounded spoonful onto a greased cookie sheet.

This recipe is such a hit that I always make a double batch-- which makes a LOT of cookies-- this is only about 1/2 of them!

10. In a 375 degree oven, bake the cookies for 9-12 minutes.

11. Allow cookies to cool on a cooling rack-- but if you're like me and just can't wait, enjoy your INCREDIBLE, warm, gooey creations with an ice-cold glass of milk!
