Tinoco's Fruit Gazpacho

 Ingredients List

  • 1/3 c Lime juice
  • 2/3 c Orange juice
  • 2 c Pineapple; diced small
  • 2 c Jicama; diced small
  • 2 c Mango; diced small
  • Tabasco sauce
  • Chili powder
  • 1/4 c Cheese; cojita or feta

 Directions

Mix lime and orange juices... Be sure all fruits are cut in 1/4 to 1/2 inch
cubes. In each of 4 glasses (use 12-14 oz. size), layer 1/4 cup each -
pineapple, jicama,mango. In a bowl combine the remaining pineapple, jicama
and mango. Spoon mixture into glasses. POUR LIME ORANGE MIXTURE EQUALLY
INTO EACH GLASS. Top with hot sauce and chili powder to taste and sprinkle
with 1 T of cheese.
