Tofu Basil Sauce on Fettuccine

Ingredients List
- 1/2 c Parmesan cheese
- 1 ts Basil
- 1 ts Parsley
- 10 1/2 oz Silken soft tofu; drained
- 1 ts Onion powder
- 1/4 ts White pepper
- 1 ts Garlic; minced
- 2 tb Plain lite soymilk
- 4 c Cooked fettuccine; hot
Directions
Blend tofu until smooth in a food processor or blender. Blend in onion
powder, pepper and basil. In a large skillet, heat soy oil over medium
heat. add minced garlic and sauti for 1 minute. Turn down the heat to low
and add the blended tofu mixture. Stir in Parmesan cheese, cook 2 to 3
minutes, stirring constantly, over low heat until cheese melts. Add soymilk
and stir to blend and to thin sauce. Serve immediately over hot pasta. top
with parsley.
