Tomato And Cheese Quesadillas

Ingredients List
- 4 Flour tortillas (9 to 10 inch tortillas)
- 1 cup Sharp Cheddar cheese, shredded
- 1 cup Diced tomatoes (I use plum tomatoes, but any kind would be just fine)
- 2 tbsp Chopped fresh coriander or parsley
- 1 Jalapeno pepper, minced
- 1 tbsp Red or green onion, minced
- 1 tbsp Fresh lime juice
- Salt to taste
- Olive oil
- Sour cream and chopped green onions
Directions
1) In a small bowl, combine tomatoes, coriander (or parsley), jalapeno, onion, lime juice and salt (this can be made a few hours ahead; drain before using.)
2) Arrange tortillas on work surface and spoon tomato mixture over one half of each tortilla. Then sprinkle with the cheese. Fold plain half of tortilla over filling and press gently to seal.
3) Brush lightly with olive oil and place on greased grill over medium-high heat. Cook for about 4 minutes on each side or until browned and crisp. 4) Cut each into 4 wedges. Garnish with sour cream and green onion before serving.
Yield: 16 wedges
