Tomato Jam

 Ingredients List

  • 1 lb Tomatoes (green or red)
  • 1 lb Sugar
  • 2 oz Ginger root
  • 1 Cinnamon stick
  • 1 Grated rind(lemon or orange)

 Directions

Peel, core and slice tomatoes. Cover with sugar and let stand for 12 hours.
Strain off the juice and boil it until syrup falls from a spoon in heavy
drops. Add the tomatoes, spices and rind. Cook until jam thickens then put
in hot jars. Process for 10 minutes in hot water bath or seal with
paraffin.
