Tomato-Onion Soup

 Ingredients List

  • 2 Onion -- diced
  • 2 Leek -- sliced thin
  • 1 Garlic clove -- pressed
  • 4 c Water
  • 8 lg Tomato -- chopped
  • 2 tb Parsley sprigs -- chopped
  • 2 ts Thyme
  • 1 Bay leaf
  • 1 ts Basil
  • 1 tb Tamari soy sauce, low
  • Sodium

 Directions

Saute onions, leeks, and garlic in 1/2 cup water until transparent (about
15 minutes). Add the remaining 3 1/2 cups of water, the tomatoes, parsley,
thyme, basil, and the bay leaf. Simmer, covered, over low heat for 60
minutes. Remove cover; simmer for 30 minutes longer. Add tamari just before
serving.

HELPFUL HINTS: This soup is great with fresh, homemade bread. Add a green
salad fro an interesting meal. A large can of tomatoes (28 ounces) may be
substituted for fresh tomatoes.
