Trout Elmere

 Ingredients List

  • 1/2 c Celery; minced
  • 1 tb Olive oil
  • 4 Strips anchovies
  • 1 c Seasoned bread crumbs
  • 3 tb Romano cheese; grated
  • 1/2 Tomato; minced
  • 1 Trout filet

 Directions

Saut”š minced celery in olive oil. Melt anchovies; add seasoned bread
crumbs. Simmer until almost dry. Add grated Romano cheese. This is the
Elmere dressing. Salt and pepper trout filet. Spread Elmere dressing on
trout; roll. Broil in lemon butter sauce, adding minced tomato.
