Truffle Mashed Potatoes

  • 1 lb Potatoes; peeled, cubed
  • 4 tb Truffle Butter; see * Note
  • 1/2 c Heavy cream
  • Drizzle of truffle oil
  • Salt; to taste
  • Freshly-ground white pepper;
  • -to taste

Cook the potatoes in salted water until tender. Mash the potatoes until
smooth. Stir in the Truffle Butter and cream and mash until incorporated.
Season the potatoes with a drizzle of truffle oil, salt and white pepper.

This recipe yields 2 cups.
