Tuna And Egg Loaf

 Ingredients List

  • 1 (14 oz.) can light tuna,
  • -drained
  • 2 Hard-cooked eggs, finely
  • -chopped
  • 1/4 c Mayonnaise
  • 1 c Fresh bread crumbs
  • 3 Green onions with tops,
  • -finely chopped
  • 1 tb Capers, rinsed and drained
  • 1 tb Finely chopped flat-leaf
  • -parsley
  • Salt and fresh ground pepper


Preheat oven to 350øF. Grease an 8x4 inch loaf pan. Bread up tuna into
small pieces. Combine tuna, eggs, mayonnaise, bread crumbs, green onions,
capers, parsley, salt, and pepper in a medium-size bowl.

Transfer mixture to loaf pan and smooth top.
