 Ingredients List

  • 350 g of flour Manitoba
  • 15 g of yeast
  • 90 ml of warm milk
  • 75 g of plain yogurt
  • 75 g of milk
  • 65 g of butter
  • one whole egg
  • 10 g of sugar
  • a teaspoon of salt
  • 1/2 teaspoon of cayenne pepper


Dissolve the yeast in warm milk . Melt 40g of butter in a double boiler or in the microwave, leaving the other 25 g for brushing . In the bowl of a planetary , put the flour , sugar and salt. Then add all the liquid ingredients , the ' lightly beaten egg and knead with the hook until the dough is soft and smooth. Overthrow the ' dough on a floured table and continue to knead for a few minutes .
Form a ball and place in a greased bowl covered with plastic wrap to rise in a warm place for at least an ' hour or until doubled in volume . A rising completed , take the ' dough and turn it over onto floured work surface . Form a sheet of rectangular or square of about 5 mm thickness without working too . Melt the remaining butter, add the cayenne pepper, mix well and spread the mixture with a brush on the pastry , leaving a little to the final brushing . Cut with a sharp knife into rectangles about 7x5 cm side and begin to distribute them , all lined up in a loaf pan .
