Vanilla Bean Cheesecake

 Ingredients List

  • 200 grams butter
  • 125 grams brown sugar
  • teaspoon honey
  • 185 grams pastry flour
  • 45 grams whole wheat flour
  • 15 grams rye flour
  • 1 grams baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt


Cream together the butter, sugar, and honey until completely smooth.
Separately, combine all the dry ingredients and sift to distribute.
Mix into the butter mixture until completely incorporated.
Remove from bowl and wrap tightly in plastic wrap.
Refrigerate until firm.
Roll to desired thickness and bake at 180C until the cookie is browned on the edges.
Remove from oven and allow to cool completely on the tray.
Store in an airtight container.
