Vanilla Flavoured Fromage Frais with a Compote of Summer Be

 Ingredients List

  • 300 ml Fromage Frais
  • 2 Vanilla Pods
  • 2 dl Slightly Whipped Double
  • -Cream
  • 300 g Selection of Mixed Summer
  • -Berries
  • 100 g Slightly sweetened puree of
  • -Berries
  • 4 Sprigs Fresh Mint


1. Place the fromage frais into a mixing bowl. Add the vanilla seeds,
double cream and icing sugar to taste.

2. Place into small darriole moulds (which have been lined with cling film)
and refrigerate for 1 hour.

3. Puree 100g of summer fruits with 20g icing sugar, and pass through a
fine sieve. Place the whole fruits into a bowl and add the puree.

4. Turn out the fromage frais into the centre of a plate. Place the berries
around and garnish with mint.
