Vanilla Flavoured Fromage Frais with a Compote of Summer Be

Ingredients List
- 300 ml Fromage Frais
- 2 Vanilla Pods
- 2 dl Slightly Whipped Double
- -Cream
- 300 g Selection of Mixed Summer
- -Berries
- 100 g Slightly sweetened puree of
- -Berries
- 4 Sprigs Fresh Mint
Directions
1. Place the fromage frais into a mixing bowl. Add the vanilla seeds,
double cream and icing sugar to taste.
2. Place into small darriole moulds (which have been lined with cling film)
and refrigerate for 1 hour.
3. Puree 100g of summer fruits with 20g icing sugar, and pass through a
fine sieve. Place the whole fruits into a bowl and add the puree.
4. Turn out the fromage frais into the centre of a plate. Place the berries
around and garnish with mint.
