Vanilla Poached Plums
Ingredients List
- 1 lg Vanilla bean
- 1/4 c Sugar OR
- 3 Sacks vanilla sugar
- 2 c Unpeeled, pitted, sliced
- -plums; (about 1#)
- 1 1/2 ts Lemon juice
- 2 ts Margarine
Directions
Cut vanilla bean in half lengthwise, and scrape seeds into a small bowl;
discard bean. Add sugar and stir well.
Place plums in a 1-quart baking dish, add sugar mixture and lemon juice,
tossing gently to coat. Dot with margarine; cover and bake at 400F for 20
min or until plums are tender, stirring once.
Yield: 4 servings @ 112 calories each.
Serving Ideas : Can serve over ice cream or toasted pound cake.
