Vanilla Rice Pudding Recipe

Ingredients List
- 1/2 cup Arborio rice
- 4 cups milk, preferably whole milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 bay leaf
Directions
Place all the ingredients in a large saucepan, except the vanilla extract. Bring the mix to a gentle boil. Once it starts boiling, turn the heat down to a gentle simmer, and cook, stirring occasionally, for about 30 to 40 minutes. Taste the rice to check for doneness. The rice should be very soft and plump.
Take the pudding off the heat and stir in the vanilla extract. Divide the pudding between 6 ramekins or custard cups. Let it cool for at least 30 minutes or refrigerate until chilled.
