Vegan Banana-Oat Bread

 Ingredients List

  • 1 cup rolled oats
  • 2 very ripe bananas
  • ΒΌ cup unsweetened applesauce OR 1 egg
  • 3 tbsp pure maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • Optional: raisins, dried fruit, nuts, etc.

 Directions

Preheat oven to 375.
Mash bananas in medium size bowl with fork.
Add remaining ingredients and mix well.
Scoop evenly into greased loaf or muffin pan.
Bake for 20 min. You'll know it's done when you insert a tooth pick and it comes out clean.
