Vegan Nachos

 Ingredients List

  • 12 Corn tortillas -- cut into
  • Quarters
  • 1 1/2 c Pinto beans -- cooked
  • 1 c Salsa
  • 1 c Red peppers, sweet --
  • Minced
  • 1/2 c Nutritional yeast "cheese"
  • Sauce


Place tortilla piecs on a baking sheet and bake at 400 deg till crisp but
not brown, about 5 minutes.

Coarsely mash the beans. Spread the beans on the tortillas and return the
wedges to the baking sheet. Dot each with the salsa. Sprinkle with the
peppers and dribble the "cheese" sauce on top.. Bake about 3 minutes. Serve
warm Variation:

Before the second baking, sprinkle with tortillas with minced jalapeno
peppers, minced scallions or minced black olives.
