Victoria sponge cake

Ingredients List
- For the cake
- 1 Cup/225g granulated/caster sugar
- 1 Cup/225g Softened Butter
- 4 eggs
- 1 Cup/200g flour
- 2 teaspoon baking powder
- 1½ teaspoons vanilla extract
- 3 tablespoons milk
- For the filling:
- ½ Cup/100g butter, softened
- ½ Cup/140g Powdered/icing sugar plus a little to sprinkle on top
- ½ teaspoon vanilla extract
- ¼ Cup/85g good quality strawberry or raspberry jam
Directions
1. Preheat the oven to 180°C or 350°F
2. Place all of the ingredients in a mixer or food processor and blend until everything is mixed.
3. Split the batter between 2 greased 9 inch round tins, and bake for 25 minutes.
4. To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract. Spread the butter cream over the bottom of one of the sponges and then spread the jam over the bottom of one of the other and sandwich them together.
5. Dust with a powdered sugar before serving.
