  • 3/4 c Medium pearl barley
  • 1 3/4 c Chicken broth
  • 2 lg Shallot; peeled and minced
  • 8 c Wild mushrooms; cut into
  • -large cubes
  • 2 ts Fresh sage; chopped
  • 1 tb Fresh rosemary; chopped
  • 1 1/2 ts Salt; plus more to taste
  • Freshly ground pepper; to
  • -taste
  • 4 lg Portobello mushrooms
  • 1 tb Italian parsley; chopped
