Warm Vegetable Salad

Ingredients List
- 8 oz of turkey bacon
- 10 oz organic baby spinach, thinly sliced
- 4-7 leeks, white & light green parts sliced thin
- 10 oz combination of mushrooms of choice ~ shitake, cremini, button
- 1 pint cherry tomatoes, oven roasted
- 1T each, butter & EVOO
- 2T dry vermouth (optional)
Directions
Preheat your oven 400Ӣ
Slice your cherry tomatoes in half and place cut side up on a sheet tray lined with parchment paper
Lightly salt & pepper the tomatoes and place in the oven for approximately 20 minutes to intensify the flavor
Slice the turkey bacon in thin strips and crisp in the pan
Remove the bacon from the pan and set aside
Slice and thoroughly clean your leeks ”“ set aside to dry
Clean and slice your mushrooms into thin strips
Chiffonade ”“ thinly slice ”“ the baby spinach and set aside in a large mixing bowl
Put 1T butter / EVOO into your pan and sauté your mushrooms with s/p to caramelize and create a crust. Remove to the mixing bowl with the bacon & spinach
Add leeks to the pan and cook with the dry vermouth until wilted, then add to the mixing bowl and toss
When the tomatoes are caramelized, remove from the oven and add to the salad.
Toss to mix thoroughly, taste and adjust seasoning as needed
