Western Beans

 Ingredients List

  • 4 Bacon strips; diced
  • 1 lg Onion; chopped
  • 1/3 c Lentils; dry
  • 1 1/3 c Water
  • 2 tb Ketchup
  • 1 ts Garlic powder
  • 3/4 ts Chili powder
  • 1 ts Cumin, ground
  • 1/4 ts Red pepper flakes, dried
  • 1 Bay leaf
  • 1 cn Tomatoes, whole (16 oz)
  • -with liquid, chopped
  • 1 cn Pinto beans; drained (15 oz)
  • 1 cn Kidney beans; drained (16oz)


Lightly fry bacon in a heavy 3-qt. saucepan. Add onion; cook until
transparent. Stir in remaining ingredients. Cook over medium heat for 45
minutes or until lentils are tender, stirring once or twice. Remove bay
leaf before serving.
