White Chocolate Apricot and Orange Squares

  • 100g butter, chopped
  • 180g white chocolate, chopped
  • 395g can sweetened condensed milk
  • 2 x 250g packet Scotch Finger biscuits, roughly chopped
  • 2 cups shredded coconut
  • 1 cup dried apricots, chopped
  • 1 orange, rind finely grated
  • TOPPING
  • 60g butter, chopped
  • 180g white chocolate, chopped

 Directions

Step 1
Line base and sides of a 3cm deep, 20cm x 30cm (base) lamington pan.
Step 2
Combine butter, chocolate and condensed milk in a saucepan over low heat. Cook, stirring constantly, for 10 minutes or until mixture thickens slightly. Transfer to a large bowl.
Step 3
Add biscuits, coconut, apricots and orange rind. Mix until combined. Press into pan. Refrigerate for 1 hour or until firm.
Step 4
Make topping Place butter and chocolate in a heatproof, microwave-safe bowl. Heat, uncovered, on MEDIUM (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth.
Step 5
Spread topping over base and refrigerate until firm. Cut into squares to serve.
