Whole 30 Breakfast Casserole

 Ingredients List

  • 1/2 lb of ground pork sausage (no sugar or nitrates)
  • 1.5 cups of chopped mushrooms, onions***
  • 1/2 cup of shredded spinach leaves
  • 6 large eggs
  • 1/2 cup of water
  • 1 can of chopped green chilies
  • salt, pepper, seasoning of choice. I used an all purpose dill seasoning.


Brown sausage in pan. set aside to cool.

2. Beat eggs and water together. Add chopped vegetables and shredded spinach .

3. Salt, pepper, season. Add can of chopped green chilies.

4. Add sausage to sprayed 8×8 pan.

5. Pour egg and vegetable mixture evenly on top of sausage.

6. Bake 400* for 40 minutes. Make sure center is done.

**This is very versatile. Use any variety of vegetables that you may have on hand. Just remember to reduce water if you use high-water content vegetables like zucchini.
