Chicken with Bacon, Broccoli and Stuffing in Foil

 Ingredients List

  • 1/4 cup dry stuffing mix - the brand I used contained whole grains and had 120 calories per 1/4 cup serving. Stuffing that is herb or chicken flavored would be best, otherwise you will want to season the stuffing.
  • 1/4 cup water - enough to moisten the stuffing. You don't want it to be soggy. You can also use chicken broth.
  • 4 oz boneless skinless chicken breast
  • 1 cup broccoli florets
  • 1/4 cup FF shredded cheddar cheese (I used Kraft)
  • 1 slice cooked bacon, crumbled - I used a slice of regular bacon The Oscar Mayer Cooked bacon is approx 23 calories per slice. You could replace with an equivalent amount of turkey bacon or even bacon bits.
  • 1 tablespoon LF or FF Ranch dressing - I used Bolthouse Farms.

 Directions

Preheat oven to 400. Spray a large sheet of aluminum foil with oil. Combine stuffing mix and water and place mixture onto the center of the foil sheet.
Top stuffing with chicken breast (uncooked). Top chicken with 1 cup broccoli. Sprinkle with 1/4 of the cheese and 1 slice of bacon crumbles and drizzle with 1 T. ranch dressing. Bring up sides of foil and fold to seal, leaving room for heat circulation inside. Place packets on a sheet tray and bake 25-30 mins. Remove packets and let stand 5 mins. Cut slits in foil for steam before opening.

The original recipe had this at 933 calories using a 6 oz. chicken breast and full fat versions of cheese, dressing, etc. My version came in at 340 calories without the broccoli, or 360 - 370 calories including it. It was also super high in protein (~ 40g) and low in fat. I will update the post to include the nutrition stats which are at home.
