Amazing Lamb Salad

Ingredients List
- 1 medium onion, minced
- 1 TBS low sodium chicken or vegetable broth
- 4 medium cloves garlic, minced
- 3/4 lb ground lamb
- 1 cup frozen peas
- 1 medium tomato peeled, seeded and diced
- 2 TBS chopped fresh mint
- 2 TBS chopped fresh basil
- 1 TBS chopped cilantro
- 1 TBS fresh lemon juice
- 1 head butter lettuce
- salt and pepper to taste
Directions
Heat 1 TBS broth in a 10 inch stainless steel skillet and Healthy Sauté onion for 2 minutes and add garlic and ground lamb. Break up lamb well so it is not in big lumps. Continue to sauté for another 5 minutes.
Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
Rinse and dry lettuce leaves discarding wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
