Banana, Carrot and Greek Yogurt Muffins

Ingredients List
- 1 3/4 cup whole wheat flour
- 1/4 cup sugar
- 2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 2 tsp baking powder
- 3/4 tsp baking soda
- a pinch of salt
- 1 small-medium sized banana, mashed
- 3/4 cup plain Greek yogurt
- 4 Tbsp melted butter
- 1 large egg
Directions
Add wet ingredients to the dry ingredients. Stir until just combined. Do not overmix as this will lead to hard, dense muffins.
Fold in 2 cups of peeled, shredded carrots and 1/2 cup raisins.
Spoon batter into muffin cups and bake at 375 degrees for 30 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
