Ingredients List
- 1 10-ounce package frozen corn kernels
- ¼ to ½ cup whole milk
- 3 ounces cream cheese, cut into pieces
- 2 Tablespoons snipped fresh chives
- Salt and pepper to taste
Directions
1. In a medium saucepan, simmer the corn and ¼ cup milk over medium heat until corn is tender, about 5 minutes.
2. Add cream cheese and stir while continuing to cook, another 1 or 2 minutes. Remove from heat and stir until cheese has fully melted and sauce is thick and creamy. Add more milk if you want it less thick.
3. Stir in fresh chives.
4. Season with salt and pepper to taste.
5. Serve immediately.
6. Alternately, this is better when served immediately but it may be made ahead and reheated before serving, but you may need to add more milk when reheating.
