DOUBLE LAYER CONFETTI CAKE RECIPE

Ingredients List
- -1 cup whole milk, at room temperature
- -6 large egg whites, at room temperature
- -2 tsp vanilla extract
- -2 1/4 cups (9 oz) cake flour, sifted
- -1 3/4 cups granulated sugar
- -4 tsp baking powder
- -1 tsp salt
- -3/4 cup unsalted butter, at cool room temperature
- -1/2 cup confetti sprinkles
Directions
1. Preheat the oven to 350 degrees F. Butter and flour two 8-inch round cake pans, line the bottoms with parchment paper and set aside.
2. In a small bowl, mix together the milk, egg whites and vanilla. Set aside.
3. Sift the flour into the bowl of a stand mixer fitted with the paddle attachment. Add the sugar, baking powder and salt and mix together on low speed. Add the butter and continue mixing on low speed until the mixture is crumbly. Pour in all but 1/2 a cup of the milk mixture and beat on medium speed for 90 seconds. Add the remaining 1/2 cup of the milk mixture and beat for 30 seconds more. Stop the mixer, scrape down the sides of the bowl and then beat on medium speed again for 20 seconds.
4. Divide the batter evenly between two bowls (about 1 lb 5 ounces per pan) and fold 1/4 cup of confetti sprinkles into each bowl. Scrape the batter into the prepared cake pans and bake until a toothpick inserted in the center comes out clean, about 27 ”“ 35 minutes. Allow the cakes to cool in the pans for 10 minutes before turning out onto a wire rack to finish cooling.
