Hawaiian Style Chicken and Rice Slow Cooker Recipe

Ingredients List
- 4 boneless skinless chicken breasts, cut into large chunks
- Salt to taste
- 1 can pineapple chunks, reserve juice
- 2 red bell peppers, diced
- â…“ cup packed brown sugar
- 3 tablespoons lemon juice
- ½ teaspoon ground ginger
- ¼ cup cornstarch
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- ½ teaspoon black pepper
- 4 cups instant white rice
- Butter, as needed
- 1 cup scallions, chopped
Directions
Spray the slow cooker with nonstick cooking spray and place the pieces of chicken inside. Season the chicken with a dash of salt if desired then place the pineapple chunks on top followed by the diced peppers.
In a mixing bowl, combine the reserved pineapple juice with the brown sugar, lemon juice, ginger, cornstarch, Dijon mustard, soy sauce, and black pepper and mix well. Pour the mixture over the chicken. Cover and cook on the low setting for 4 to 5 hours or 2 to 3 hours on the high setting.
Prepare the instant white rice just before the chicken is done and season generously with butter and black pepper if desired.
Serve the Hawaiian style chicken over a bed of the hot buttered rice and sprinkle the chopped scallions on top.
