New Orleans Truck Fries

Ingredients List
- 4 russet potatoes, washed and cut into even strips (peeling is optional)
- ¼ cup finely chopped parsley
- â…“ cup freshly grated parmesan cheese
- 2 Tablespoons oil
- 2 teaspoons creole seasoning (I used Zatarain”™s Big & Zesty)
Directions
1. Preheat the oven to 400 degrees.
2. Wash, peel and cut the potatoes into strips. Soak in water and dry well.
3. On a parchment paper lined baking sheet, toss the potatoes, creole seasoning and oil. Using your hands, toss well until everything is evenly coated.
4. Bake for 20 minutes, checking after 10 minutes to flip for even browning.
5. Remove from oven and coat potatoes with fresh Parmesan and parsley.
6. Serve hot with a little mayo and ketchup.
