Polish Potato Cheese Soup

- 2 tablespoons Land O LakesĀ® Butter
- 2 large (1 1/2 cups) onions, thinly sliced
- 4 cups milk
- 3 tablespoons all-purpose flour
- 3 medium (3 cups) potatoes, cubed 1/2-inch
- 1/4 teaspoon pepper
- 8 ounces (2 cups) shredded Cheddar cheese
- 2 (about 8 ounces) cooked Polish sausage, cut into 1/4-inch slices
- Salt, if desired
Directions
1. Melt butter in 3-quart saucepan until sizzling; add onions.
2. Cook over medium heat, stirring occasionally, 4-5 minutes or until softened.
3. Stir in flour; continue cooking 1 minute. Stir in milk, potatoes and pepper.
4. Continue cooking, stirring constantly, 3-5 minutes or until mixture comes to a boil.
5. Cover; reduce heat to medium-low. Cook 22-28 minutes or until potatoes are fork tender.
6. Stir in cheese and sausage. Continue cooking, stirring occasionally, 3-4 minutes or until cheese is melted and soup is heated through. Salt to taste.
