Ingredients List
- 2 c. chicken breasts, cubed
- 5 tbsp. soy sauce
- 1/4 c. oil
- 1 tsp. red pepper flakes
- 3 green onions, sliced
- 2 garlic cloves, minced
- 1 1/2 tbsp. cornstarch
- 4 tsp. sugar
- 2 tsp. white vinegar
- toasted sesame seeds
- cashews
Directions
Pour 1 tablespoon soy sauce into a medium sized bowl. Cut chicken into bite-sized pieces and place in soy sauce. Let sit.
In a small bowl, whisk remaining soy sauce, cornstarch, sugar, and vinegar. Slice the green onions and measure out red pepper flakes and minced garlic.
Drain chicken in strainer to remove as much marinade as possible. Heat oil in a wok over high heat. Add red pepper flakes to oil, stir a couple times. Add chicken all at once, let sit for a minute or two until golden, then turn chicken. Add garlic and cook until chicken is golden on all sides and cooked through, then drain oil. Add cashews. Move off heat and pour in sauce. Turn chicken mixture constantly until mixture is covered in sauce. Sauce will thicken. Continue to stir. Add green onions and sesame seeds.
