Easy Shoofly Cake

Ingredients List
- 1 cup Molasses (not Blackstrap)
- 1 Tablespoon Baking Soda
- 2-¼ cups Boiling Water
- 4 cups All-purpose Flour
- ½ teaspoons Salt
- 2 cups Light Brown Sugar
- ¾ cups Vegetable Oil
Directions
Preheat oven to 350ºF.
In a medium-sized heat-proof bowl, combine molasses, baking soda, and boiling water and stir until well mixed. Set aside.
In a large bowl, whisk together flour, salt, and brown sugar. Add vegetable oil and mix with your hands until crumbs form.
Remove 1 ½ cups of the crumb mixture and set aside. Whisk remaining crumbs into the molasses mixture until combined. The batter will be thin.
Pour the batter into an ungreased 13×9 baking dish. Sprinkle the 1 ½ cups of reserved crumbs evenly over the batter.
Bake for 40–45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely on a wire rack.
