Jalapeno Cheddar Crackers
- Recipe Submitted by maryjosh on 11/16/2016
Ingredients List
- 2 c all-purpose flour
- 1/8 tsp baking powder
- 1 tsp salt
- 14 tbsp cold unsalted butter, cubed
- 5 oz extra sharp cheddar cheese, grated
- 1 tbsp minced seeded jalapeño pepper
- 1/4 tsp chipotle chili powder
- 3 tbsp ice water
- 1 egg beaten with 1 tbsp milk, for egg wash
Directions
Combine the flour, salt, and baking powder together in a large bowl. Add in the cubed butter and use a pastry blender to cut the butter into the flour. Alternatively, you can do this entire step in a food processor and pulse until the mixture resembles course meal.
Add the grated cheddar, minced jalapeño, and chili powder; mix with a spoon, or pulse in the food processor. Stream in a little bit of ice water, stirring the mixture until it begins to turn into a dough and form into a ball.
Turn out the dough onto a floured board and roll it into a 14-inch log. Wrap in plastic wrap and refrigerate for at least 1 hour.
Preheat the oven to 400°F. Line a baking sheet with parchment paper. Cut the log into 3/8 inch thick slices and place on the prepared baking sheet. Brush the crackers with the egg wash before baking them approximately 15 minutes until the crackers are golden brown. Let them cool on a cooling rack until their firm up a bit.
Serve barely warm.
